Derived from the upper forequarter of beef, beef chuck shoulder tender is a lean, single muscle that tapers at one end and is ideal for medallions and thinly sliced applications.
Cut this chuck into medallions and use for kabobs. Skewer the pieces with mushrooms, fresh tomatoes, onions and peppers, then grill.
This product is sometimes known as Scotties, or Scotch tenders.
This meat has been jaccarded twice for tenderness.
USDA Choice is a high grade. The meat features ample marbling, and it is quite tender, juicy and flavorful.
These six-pound chuck shoulders come two per case.
