Sarson da saag is a quintessential Punjabi dish featuring mustard greens, spinach and other leafy vegetables.Often paired with makki di roti, this traditional delicacy exudes rich flavours.
To prepare,boil a blend of mustard greens, spinach,bathua and Fenugreek leaves until tender. After blending them into a coarse paste , saute onions,green chillies, ginger, and garlic in ghee until golden. Introduce tomatoes, Cooking until they soften. Incorporate the greens, seasoning with salt, and simmer on low heat. Mix maize flour with water, adding it to the greens for thickness. In a separate pan, temper ghee with cumin seed and asafoetida,then pour over the saag.Simmer, allowing the flavours to meld for a delightful sarson da saag, perfect when paired with makki di roti
