TURKEYS:

We carry Mary’s Turkeys. They are raised by Mary Pitman and her family on their cooperative of farms in Fresno, California. The variety we carry are free-range, all-natural, certified non-GMO, but aren’t certified organic.

Mary’s Turkeys are fresh, not frozen. Please refer to the Mary's Turkey Website for more information on this process.

The recommendation for helping people decide what size of turkey to purchase is 2# per person for leftovers, 1# per person if they don’t want leftovers.

RIB ROASTS:

“Standing” this is a bone-in rib roast

“Cut and Tied” this style we remove the rack of ribs from the roast and then tie them back on with butcher twine. This makes it easy for the customer to cook the roast on it’s rack for good flavor and then just clip the strings remove the rack and carve the roast without having to navigate around bones.

A good rule of thumb for estimating the size of the roast based on the size of the crowd is 1 bone per 2 people if they desire leftovers. Each bone portion is going to weigh at least 2 pounds. For instance, a 3-bone roast will weigh 6-8 pounds.
