Vinification:**
Manual harvest begins in late September, with grapes collected in small 15-kg boxes. Grapes are destemmed on a terrace above the cellar, allowing gravity to transfer the must into stainless steel vats. Alcoholic fermentation occurs at controlled temperatures 28–30°C), with 20 days of skin contact. Malolactic fermentation takes place in concrete vats.
Aging:12 months in concrete containers, with multiple decantations to clarify the wine.
