CASE PAOLIN- COL FONDO ASOLO PROSECCO DOCG SUI LIEVITI BRUT NATURE

Production area: to the north of Treviso, on the slopes of Montello in our property on Volpago del Montello area.

Grape variety: Glera

Grape Harvest: hand picked into boxes in the middle/end of September.

Wine-making technique: the grapes come from our most important Asolo Prosecco property (age of vines around 30 years); also, the must is left in contact with the grape skins for approximately 15-18 hours (light maceration).

First fermentation occurs inside steel tanks at controlled temperature with indigenous yeasts (natural from the grapes). Also, the wine is made following the Classic Method using inbottle refermentation without dègorgement. The natural yeasts that remain indicate that the wine is genuine, and healthy.

Taste, Colour and Aroma:

Appearance: straw yellow with greenish highlights. Presents typical light deposits of yeast in the bottom of the bottle.

Fragrance: starting with hints of yellow fruit and continuing with elegant floral notes and an intense aroma of acacia flower with a good mineral sensation.

Flavor: well sustained, balanced, elegance and mineral.

Serving suggestions: a commendable choice for the entire meal, excellent companion to fish and poultry courses. Serving temperature: 8-10°C / 47-50°F

Storage: Store in a cool place away from light.

Alcoholic content: 12% vol

Residual sugar: 0 gr/L
